Matthias Giroud
Matthias’ extensive travel and passion for working with his teams across the globe has provided a deep knowledge and appreciation of the world’s flavours and trends. He infuses this into his signature cocktails, both with and without alcohol. Alcohol-free cocktails in particular is a very important and stimulating universe, enabling him to create experiences that are multicultural and multigenerational.
Matthias Giroud was born on the beaches of the French Antilles. Throughout his childhood he travelled all over the world with his parents, developing a passion for travelling and exploring the world. He first started working at a bar at the age of 16 and in 1997, at the age of 18, he worked at the famous Bar Fly, Avenue George V in Paris. He decided to perfect his skills working at numerous luxury hotels, private beach resorts and cocktail bars throughout Europe. After spending 5 years in training, he returned to his roots – Bar Fly Paris – and successively became bar chef at Bound, Buddha Bar, Barrio Latino and Barlotti Paris. A desire to travel resurfaced. It was soon after, in 2008, that he was named Global Executive Bar Chef of the George V Entertainment Group. Matthias went on to be in charge of international development of the Group’s brands for more than 10 years and has opened different concepts across ten of the Group’s brands in more than 32 countries all over the world.
In 2009, 2010 and 2011 Matthias Giroud became the first French executive bar chef to be named within the prestigious World’s 50 Best Bars ranking with Buddha Bar Paris. Matthias likes to share his passion which led him to co-sign the cocktail dictionary “la petite bibliothèque des cocktails” by Larousse editions. He also participates in many events focused on haute cuisine, from which he takes much of his inspiration. At the World Cuisine Summit 2015, accompanied by chef Alain Ducasse, Matthias created a cocktail painting inspired by the dishes of 3 great chefs (Alain Ducasse, Paul Bocuse and Joël Robuchon). In 2019 he opened the same event with three Michelin star chef Anne-Sophie Pic. Matthias also appears at conferences around the world, such as Mistura Qaray (Lima, Peru) where he shared his passion for cocktails and his experiences with chefs Gaston Acurio and Virgilio Martinez. Today, Matthias Giroud, together with his partner, runs the workshop L’Alchimiste, in Boulogne Billancourt, dedicated to the creation of unique mixology and gastronomy experiences.

Matthias joined the TRIBE collective to develop a signature cocktail menu. “TRIBE is a unique, new-generation place. What seduced me is that the bar opens onto the lobby, making it a living space in its own right – lively and which promotes conviviality. For TRIBE, I created the first ‘voyage of flavours’ focused on low alcohol cocktails – working with French liqueurs which are part of our ancestral heritage, and giving them a touch of modernity with ingredients from around the world discovered during my many travels. I wanted to offer real cocktail experiences accessible to everyone through their taste and reduced alcohol content.”
